Nuova Simonelli has been making commercial espresso machines in Belforte del Chienti, a small town in central Italy, since 1936. They've spent more than a decade as the official machine of the World Barista Championship — every WBC final since 2011 has been pulled on a Nuova Simonelli Aurelia. That's most of the reason you see them behind so many serious specialty bars in the US and Europe.
The lineup splits clean. The Appia Life is the daily-driver workhorse — restaurants, café chains, hospitality, anywhere consistency under volume matters and the barista isn't doing manual flow profiling all day. The Aurelia Wave is the specialty machine — competition baristas, pour-over bars, multi-roaster programs that want temperature stability across groups and a more deliberate workflow. The Aurelia Wave T3 adds three-zone temperature control per group, which is what you want if you're brewing different origins back-to-back on the same bar. Mythos is the matched grinder family — high-thermal-mass burr chambers built for shot-by-shot espresso.
The reason Nuova Simonelli machines hold up in volume is the engineering choice to keep things mechanically sane and parts-stocked. Boilers, group heads, electronic boards — all swap out, all are supported stateside through Simonelli Group's Ferndale, Washington facility. A ten-year-old Appia in a service contract still gets factory parts.
